The Lark is a pioneer in providing farm to table produce for their patrons. In following this Lark tradition of using seasonal locally grown produce Chef John Somerville contracts numerous farmers to provide various vegetables in the form of restaurant Community Supported Agriculture shares. Chef John uses the following South East Michigan farmers.
Carpenter’s Organic : asparagus, heirloom tomatoes, onions
Tantre Organic Farm: garlic, shiitake mushrooms, sorrel, peas, favas, gold beets, squash and misc herbs
Coblentz Acres Organic: basil, heirloom tomatoes, beans, yukon gold, sweet potatoes, corn, broccoli
Wilsons Organic Farm: heirloom tomatoes (over 80 varieties), squash, concord grapes
GardenWorks Organic: arugula, kale, basil, raddichio, cucumbers, potatoes, radishes
Frog Holler Organic Farm: Michigans first certified organic farm provides mixed greens, beets, herbs, cabbages, raspberries
Kapnick Farms: Blueberries, peaches, apples and cider
Guernsey Farms Dairy: Milk, cream, eggs and butter
Seely Farms: mixed greens, arugula and spinach
Zingermans Creamery: Ricotta and burrata cheese
